At Kablon Farms on the western coast of the Philippines, cacao trees produce both yellow and red pods, which are traditionally harvested and fermented together.
For this special batch, farmers and fermenters separated the yellow and red pods to explore their individual flavour characteristics. Both batches were then treated identically at every stage, the same fermentation, drying and storage at origin, followed by the same sorting, roasting, grinding and recipe in Dorset.
This bar is made exclusively from the Yellow Pod selection, offering a rare opportunity to experience its distinctive character on its own.
