Fine cocoa beans, sourced from a social enterprise in the Soconusco region of Chiapas, southern Mexico, are carefully transformed into chocolate before undergoing a period of maturation, allowing their complex fruity character to fully develop.

Named after the Mokaya, an early civilisation believed to have been among the first users of cocoa, this chocolate is also a small tribute to Hayden Burvill, designer, race engineer and friend.
